Ingredients for vegetable pecel:
500 grams of peanuts
3 kaffir lime leaves
100 grams of palm sugar
1 tablespoon tamarind paste
Ingredients to be ground:
5 curly red chilies
3 red bird's eye chilies
4 cloves of garlic
2 cm lesser galangal
1 teaspoon fried shrimp paste
1 teaspoon salt
How to Make Vegetable Pecel Sauce:
Fry or roast the peanuts until cooked. Remove and drain, then let them cool.
Crush the peanuts using a mortar and pestle or a grinder. Put them in a bowl.
Ground Ingredients: Fry the chilies, garlic, and lesser galangal until wilted. Remove and drain.
Crush or grind them together with palm sugar and kaffir lime leaves until smooth.
Mix the Ground Ingredients with the crushed peanuts, tamarind paste, then stir until thoroughly combined.
The pecel sauce is ready to be used for the boiled vegetables.
When using, take an adequate amount of pecel sauce and mix it with warm water until it becomes a thick sauce.
Tips for Making Vegetable Pecel Sauce:
Before frying, sort and discard small, rotten, or damaged peanuts to prevent bitterness in the pecel sauce.
Choose good-quality peanuts for the pecel sauce. Tuban or Bali peanuts are small but have a sweet and savory taste.
Adjust the levels of sweetness and spiciness according to your preference.
If storing, seal the sauce in an airtight container and refrigerate to prolong its shelf life.
